No-bake chocolate and peanut butter oats minis

This post has been long overdue. All because I let the restaurant reviews, work and laziness takeover and these tiny little treats that I made for friends and family during Diwali and Christmas got left out. So here is the recipe for no-bake chocolate and peanut butter oats minis which are so easy to make and also will surely get you loads of compliments.

No-bake oats, chocolate and peanut butter minis

(makes 30 mini oats cups)

Ingredients:
1 cup crushed chocolate wafer biscuits (I used Tiffany)
1 cup oats (I used Quaker oats)
2/3 + 2 tbsp cup chunky peanut butter
2 -3 tbsp butter (I used Amul)
a tiny piece of dark chocolate (Approx 20 -30 gms)
1 tbsp honey
100-150 gms of dark chocolate
crushed roasted peanuts
mini cupcake liners

Method:

1. Roast the oats in a pan on low flame till they are a little crunchy and give out amazing toasty aroma. Once done let them cool a little

2. In the mean time melt peanut butter, butter and chocolate in a microwave proof bowl for about a minute. Once the peanut butter, butter and chocolate are soft mix them well

3. In a big bowl mix the oats, crushed chocolate wafers, the melted chocolate and butter mix and 1 tbsp of honey

4. Mix it well till everything is coated with peanut butter. You can adjust the sweetness by adding more honey if needed

5. Fill the mini cupcake liners with the oats mix. Make surely to press the mix well in the liners so that it holds shape once it is cooled

6. Place it the refrigerator for 30 minutes

7. In the mean time roast a few peanuts and crush them coarsely

8. Melt the dark chocolate in  a microwave proof bowl for about 30-40 seconds. Make sure the chocolate is on room temperature and cut into small pieces so that it melts easily in the microwave

9. Remove the oats minis from the refrigerator and spread a thin layer of the melted dark chocolate on the minis and sprinkle some of the crushed peanuts

10. Place the minis in the refrigerator for about an hour till the chocolate is set

11. Pack in pretty boxes and spread happiness! 🙂

  1. Hi, These sound great. How do you manage to toast the oats without crushing them though? The last time I toasted oats (for homemade muesli), I was left with oat bits.
