A quick one person meal! Egg Masala

I seriously feel that eggs are a hungry lazy person’s best friend. Can whip up a dish in a jiffy and clearly can be cooked to your liking…hard boiled/soft boiled/poached/scrambled. I have already posted three super easy egg recipes before, and they all are super easy to make. Also recently I made a spicy frittata with generous amounts of onion, tomatoes, thinly sliced potatoes, herbs, chili and bell peppers! Filling, easy and wiped off in under 5 minutes!! Need I say more. All these recipes have always happened when I was too lazy but wanted something to fill my tummy. Egg Masala was a result of another lonely lunch day on a lazy droopy afternoon. A bit prep and its super quick to make! So here is the recipe of spice filled and no sweat Egg Masala.

Egg Masala

(serves 1 hungry lazy person)
2 green chilies pounded
1 tsp ginger garlic paste
1 tsp cumin seeds
1 tbsp oil
1 onion finely chopped
2 tomatoes finely chopped
1 tsp red chili powder
2 tsp coriander powder
1/2 tsp turmeric powder
1/2 – 1 tsp of kitchen king masala (optional)
salt to taste
1/2 cup water
1/2 capsicum thinly sliced
3 hard boiled eggs halved

1. Heat oil in a pan. Once the oil is hot enough add the ginger garlic paste, green chilies and cumin seeds

2. Once the cumin seeds crackle and the aromas of ginger garlic fill up your kitchen add in the finely chopped onions. Saute till the onions are translucent and soft

3. Add the finely chopped tomatoes and cook till they soften

4. Add in the masalas – red chili powder, coriander powder, turmeric, kitchen king masala

5. Cook till the raw smell of the masalas disappear and the onion-tomato mix has lost all of its moisture

6. Add salt and water to the pan and bring the mix till it simmers

7. Once the gravy starts bubbling and has reduced a little add the sliced capsicum

8. Let it simmer on low for another five minutes. Add the halved hard boiled eggs. Lightly place some of the gravy on the eggs so that the flavors can seep through the eggs.

9. Cover and let it cook on low for another 5 minutes. If you feel the gravy has dried up add a little bit of water to adjust the consistency as per your liking. Serve hot with freshly chopped onion slices, chapati or hot steaming rice.
