Wake up to – Step by step Spicy baked beans toasties

I personally feel that baked beans are very versatile in terms of what flavor addition can be done and also they have become a super easy breakfast option thanks to the easy availability of baked beans cans nowadays..

Baked beans have always faithfully accompanied the obviously more dominant eggs or sausages but I wanted to just relish these tiny little beans but with a bit of spice. So I decided to add spice, crunch and cheesiness to these humble beans and enjoy my lazy holiday!

Here is an easy step by step recipe of Spicy baked beans toasties.

Ingredients:
(Serves 2)
Half a can of baked beans (approximately 5-6 tbsp of baked beans)
1 tbsp oil
1 tsp of ginger and garlic paste (I used freshly ground ginger garlic paste)
2 green chillies finely chopped (the number of chilies can be reduced as per your taste)
1 small onion chopped or half an onion chopped
1/4 tsp red chili powder
1/2 tsp coriander powder
2-3 tbsp water
salt and pepper to taste
coriander leaves finely chopped to be added to the baked beans and for garnishing
4-5 slices of bread
cheese (I used Amul pizza cheese)

Method:
Heat oil in a pan. Add the ginger garlic paste and green chilies and cook till the raw smell of ginger and garlic disappears.

Add in the chopped onion and cook till translucent.

Add chili powder and coriander powder and cook for a minute so that the masalas do not taste raw.

Add the baked beans, water, salt and pepper to the onions. Let it cook on high for 5 minutes so that the baked beans are heated through and the water reduces. We do not  want an extremely runny baked beans mix because it will be spread on bread and we do not want the bread to get soggy.

Add the coriander and cook for a minute.

This is how the baked beans should look like 🙂

Spread the baked beans mix onto bread slices. I had weirdly shaped rolls at hand and hence the funny looking picture!!

Grate some cheese on top and grill in the oven just enough to melt the cheese..at around 180°C for 10 minutes.

Serve hot garnished with coriander!!
